Have A Slice — Or Two

I’m a cheesehead AND of Italian descent. This low carb Deep Dish Pizza satisfies both appetites. I recently microwaved a leftover portion for breakfast and it was almost as good as fresh cooked 🙂

The egg mixture and five-cheese blend create a more than adequate substitute for the high carb dough crust of traditional pies.

Cuisine: Italian
Serves: 4
INGREDIENTS
  • 4 oz cream cheese
  • 3 eggs
  • ¼ cup parmesan cheese
  • ⅓ cup heavy cream
  • ¼ cup tomato sauce
  • 2 cups shredded Italian cheese blend (5 or 6 cheese blend)
  • 1½ cups shredded mozzarella cheese
  • 20 slices pepperoni
  • ½ tsp oregano
  • ¼ tsp garlic power
METHOD
  1. Bring cream cheese to room temperature to soften it.
  2. Preheat oven to 375.
  3. Blend together the eggs and cream cheese until smooth.
  4. Blend in heavy cream, parmesan cheese, tomato sauce and spices.
  5. Pour the Italian cheese blend into a 13x9 inch baking dish or pan that has been greased with olive oil.
  6. Add the egg mixture to the pan and blend the cheese so it's suspended in the mixture and not concentrated on the bottom of the pan.
  7. Bake for 25-30 minutes and remove from oven to add layers of mozzarella and pepperoni. Bake for 10 more minutes until bubbly and brown.

About Vic Johnson

I've spent most of my life battling weight issues. I can't count the number of times I've lost 50 pounds or more (and gained it all back and more). In May 2013 I was diagnosed with prediabetes. This followed my youngest son's diagnosis of Type II four years earlier. Thanks to my wife Lisa and my overwhelming desire to avoid drugs at all costs, I embarked on a journey where I discovered an amazing method to overcome obesity, reverse diabetes and extend my life. My contributions to this site and to you are a result of that journey.

  1. This was amazing! My family who were not told it was not really pizza were completely fooled. They loved it and we had to make more the next night by request. Next day reheat just like regular dough pizza tastes great too. Added mushrooms, black olives and other ingredients for toppings just fine.
